Gyutou are the Japanese equivalent of a typical European chef’s knife. They are the ideal all-purpose kitchen knives and can be used for most tasks. Japanese gyutou are typically lighter and thinner than a European knife, are made out of a harder steel and as a result, hold a better edge. The design features nothing to obstructing the edge of the handle end of the blade, so it can be sharpened and thus used entirely. The word gyutou in Japanese means ‘beef knife’.

To me this is an excellent everyday kitchen workhorse. This particular purchase is a wedding gift for friend and my 4th Masamoto. I love this knife, great feel, easy to sharpen, couldn't be more satisfied with chubo knives. I've said it before, there is no reason to go to any other site for best quality knives and customer service.
I have a large knife collection. A few KS. This is a solid piece. More finish could have gone into the spine. The Kanehide TK is a better knife for less money I think. And I don’t usually care about the “for less money” part. Just want to buy the best.
